Meal Plan 3/28-4/1

The bounty of last season's Farmer's Market in Ferguson.  Only a few more weeks and it will be back!!!
Monday, 3/28:  Creamy Risotto with chicken, and green beans sauteed with black pepper and lemon

Tuesday, 3/29:  Home-made chicken pot pie (I roasted a chicken last week, and this will be the last of four meals that I got out of it...we'll be done with chicken for a while after this week)

Wednesday, 3/30:  Penne pasta tossed with garbanzo beans, tomatoes, and yellow and red peppers

Thursday, 3/31:  BBQ pork ribs with roasted sweet potato wedges and steamed broccoli

Friday, 4/1:  We are volunteering for the Erin Bode concert at Crave coffeehouse...so, it's gonna be leftovers or picking something up.

SATURDAY!!!  Hubs is making THIS!  We love Bon Appetempt as much as we love Bon Appetite : )

  1. We've tweaked our meal planning strategy a bit. Tuesday is now salad night. Thursday is fish night. Starting next week, Wednesday is kids' pick. For Friday and Saturday, I almost always grill. That leaves Sunday and Monday for Christina to fill. We're hoping this makes meal planning a bit easier. For this week, I believe the plan looks something like this:

    Mon: dinner at the in-law's (lasagna)
    Tue: Grilled chicken, olives, tomatoes, cucumbers and feta cheese over romaine.
    Wed: Some sort of vegetable/mushroom pasta concoction that Christina is making.
    Thu: Tilapia w/ rice and broccoli. We keep the fish simple, baking it with garlic, lemon zest and butter.
    Fri: homemade pizza (one of my specialties)

  2. a few things we made this week/will be having this next week:
    Chicken betty & hashbrowns (a dukes family casserole)
    Beef Ravioli with tomatoes and mozzarella along Side roasted asparagus and orange peppers
    Country ribs with rice & veggies
    grilled burgers
    BLTs (turkey bacon, spinach, tomatoes with a bit of cheese on homemade honey whole wheat bread)
    Chicken Apple Sausages

  3. ah, inspiration! Nikki: I always forget about BLTs, isn't that ridiculous of me?
    Nathan: I'm digging how organized your weekly planning is...maybe Steve and I can adopt a similar schedule. We are the recent proud owners of a Weber charcoal grill, so grilling is a new and exciting option for us : )

  4. Oh the wonderful riches of the Weber grill. I'm so happy for your family. You have entered into a new life. It is the ONLY grill you will ever need, and one of the best purchases you could ever make. We need to talk about charcoal and chimney starters.
